How To Make A Truly Indulgent Chocolate Fondant The Fermain Valley Way!

Serves 10



150g of plain flour sifted
350g chocolate (70%) broken into pieces
350g unsalted butter at room temperature
8 medium sized eggs
8 egg yolks
160g caster sugar
2 tbsp cocoa powder for dusting


  1. Turn your oven on to 180°C so that you are ready to go, timing is key with this recipe!
  2. Start by cracking your eggs into a large bowl – leave aside for later
  3. Melt your chocolate into a large bowl over boiling water on the hob
  4. In a separate bowl, combine the eggs, egg yolks and sugar using an electric mixer or whisk until fluffy
  5. Mix the butter into the melting chocolate until shiny and velvety
  6. Pour your melted chocolate slowly into the fluffy mix
  7. Add the flour and give it a good stir until all combined
  8. Pour into a piping bag and tighten the top to ensure that none of the goodness escapes
  9. Brush melted butter into small ramekins and then dust the cocoa powder to the inside
  10. Remove/tap off any excess
  11. Pour your luscious mix into the ramekins three quarters full
  12. Place into the oven for 8 minutes at 180°C
  13. Remove from the oven and serve with ice cream or cream
  14. Enjoy!
